中文摘要: 以云南省昆明地区常见10种新鲜野生食用菌为研究对象,采用微波消解、电感耦合等离子体质谱(inductively coupled plasma mass spectrometry,ICP-MS)法对10种新鲜野生菌中菌柄和菌盖Al、As、Cd等22种元素的含量进行测定与分析。研究表明:10种新鲜野生菌中含有丰富的常微量元素,属于高钾低钠食品;不同种野生菌中元素含量差异较大,同一种元素在同种野生菌不同的部位含量差距较大,10种野生菌中干巴菌Se元素最高(8.250 mg/kg),其它野生菌中硒元素的含量均低于1.7 mg/kg。
Abstract:The content of 22 elements(such as Al,As,Ca,etc)were determined and analyzed by microwave digestion and inductively coupled plasma mass spectrometry(ICP-MS)method in Kunming,Yunnan Province.The 10 varieties of fresh wild grown mushrooms were rich in common and trace elements,belonging to high potassium and low sodium foods.The content of each element in the different wild species varied greatly.The content of the same element had large gaps in different parts of the same wild fungus.Sparassis contained the highest selenium level(8.250 mg/kg).The selenium content was lower than 1.7 mg/kg in other mushrooms.
