河北省黑木耳主产区5种黑木耳的功能性成分及抗氧化性研究

中文摘要: 检测河北省黑木耳主产区相同栽培环境下的5种黑木耳子实体的粗多糖、黄酮及多酚含量及其抗氧化生物活性。检测结果表明:不同品种黑木耳子实体粗多糖、黄酮及多酚含量存在一定差异;子实体粗多糖含量在7.52 g/100 g~10.39 g/100 g之间,黄酮含量在3.61 mg/100 g~5.92 mg/100 g之间,多酚含量在1 025.59 mg/100 g~1 309.87 mg/100 g之间,其中黑厚圆粗多糖含量最高,黑山黄酮含量最高,黑威15多酚含量最高。清除2,2′-联氨-双-(3-乙基苯并噻唑啉-6-磺酸)自由基[2,2′-hydrazine-bis-(3-ethylbenzothiazolin-6-sulfonic acid)free radical,ABTS+·]、1,1-二苯基-2-三硝基苯肼自由基(1,1-diphenyl-2-trinitrophenylhydrazine free radical,DPPH·)及还原性试验结果表明:5个黑木耳品种子实体均具有有效的自由基清除能力和还原力,黑山的抗氧化性表现最强,其次为黑威15、青灰小碗、黑厚圆、黑杂19。不同黑木耳品种功能性成分含量及抗氧化活性存在差异,表现出生物多样性,试验结果可为河北省黑木耳种质资源品比、选育、食品资源化开发加工提供技术参考。

Abstract:The contents of crude polysaccharides,flavonoids,polyphenols,and antioxidant activities of five varieties of Auricularia auricula fruit bodies from the same cultivation unit in Hebei Province were determined.The contents of crude polysaccharides,flavonoids,and polyphenols were 7.52 g/100 g-10.39 g/100 g,3.61 mg/100 g-5.92 mg/100 g,and 1 025.59 mg/100 g-1 309.87 mg/100 g,respectively.The results of scavenging[2,2′-hydrazin-bis-(3-ethylbenzothiazolin-6-sulfonic acid)free radical,ABTS+·],1,1-Diphenyl-2-trinitrophenyhydrazine free radical,DPPH·,and reducibility test showed five types of A.auricula fruiting bodies.The highest contents of crude polysaccharide,flavonoids,and polyphenols were found in Heihouyuan,Heishan,and Heiwei 15,respectively.had effective free radical scavenging(ABTS+·,DPPH·)and reducing power.The highest antioxidant activity was found in Heishan,followed by Heiwei 15,Qinghuixiaowan,Heihouyuan,and Heiza19.The differences in functional components and antioxidant activity between the A.auricula varieties show functional diversity.The results of this study can provide technical reference for the optimal breeding,resource development,and processing of A.auricula germplasm resources in Hebei Province.
