中文摘要: 牛肝菌是具有极高营养价值和药用价值的肉质大型真菌。目前,牛肝菌保鲜与功能成分研究薄弱、资源加工利用程度低及高附加值产品少等问题,严重制约我国牛肝菌产业的健康发展。围绕对牛肝菌营养价值、保鲜技术及在医药、食品行业中应用的最新研究进展进行阐述,进一步探索牛肝菌产业发展的新途径,以期为牛肝菌的精深加工及新产品的开发提供有益参考。
Abstract:Boletus is a kind of macrofungi with high nutritional and medicinal value.At present,there are some problems in the development of Boletus industry,including few studied on retain freshness and bioactive components,low utilization and few products with high additional value,which had seriously restricted the healthy development of Boletus industry.The latest research on the nutritional value of Boletus,preservation and processing technology,and the application in medicine and food industry were summarized.The new way to promote Boletus industry development were proposed,which could provide beneficial references for further deep-processing and development of new Boletus products.
