Abstract:Boletus is a kind of macrofungi with high nutritional and medicinal value.At present，there are some problems in the development of Boletus industry，including few studied on retain freshness and bioactive components，low utilization and few products with high additional value，which had seriously restricted the healthy development of Boletus industry.The latest research on the nutritional value of Boletus，preservation and processing technology，and the application in medicine and food industry were summarized.The new way to promote Boletus industry development were proposed，which could provide beneficial references for further deep-processing and development of new Boletus products.
