中文摘要: 神秘果中含有的神秘果素,使人在品尝酸味食物时感受到甜味,而不是酸味。近年来,国内外学者研究发现神秘果中含有多种对健康有益的生物活性物质。该文对神秘果的化学成分及其生物活性的研究进展进行总结,以期对神秘果的进一步研究提供参考。
Abstract:Synsepalum dulcificum contains miraculin,which is a substance that has an unusual ability to modify a sour taste into sweet taste.With the research on S.dulcificum by researchers here and abroad,it was found that S.dulcificum contained many substances which were able to improve health.The current research progresses of the chemical constituents and bioactivities of S.dulcificum were reviewed in this article in order to provide a reference for further research.
