中文摘要: 随着经济的发展,人们的健康意识逐步提高,对功能性食品的消费逐渐增多。生物活性肽不仅具有丰富的营养价值,还具有抗氧化、抗疲劳、降血压、抗菌等多种生物功能。此外,生物活性肽具有来源广泛、安全性高、以及易于消化吸收等优点,这为其在功能性食品中的开发应用提供广阔前景。该文对生物活性肽的种类、生物功能及其在食品行业的应用进行综述。

Abstract:With the development of economy,human awareness of health has been gradually improved and their consumption of functional foods has been increased.Bioactive peptides have many biological functions such as anti-oxidation,anti-fatigue,anti-hypertension and anti-microbial activities besides nutrient utilization.In addition,bioactive peptides have the advantages of rich source,safety,and ease of absorption,which make them promising in the functional food industry.The biological functions and applications in food industry of bioactive peptides were reviewed.
