中文摘要: 以百色地区芒果检出率较高的黑曲霉、烟曲霉为研究对象,研究短波紫外线(ultraviolet c radiation,UV-C)对黑曲霉、烟曲霉的致死影响,并应用Bigelow模型、Modified Gompertz模型、Log-Logistic模型和Weibull模型描述其致死历程。结果表明:黑曲霉、烟曲霉存活率对数和UV-C照射时间成反比,在2.524 kJ/m2时,黑曲霉、烟曲霉的存活率对数下降1.1个数量级、致死率均在90%以上。黑曲霉对UV-C的耐受能力大于烟曲霉;烟曲霉对0~15.04 kJ/m2的UV-C较为不耐受;黑曲霉对5.04 kJ/m2~7.48 kJ/m2的UV-C耐受能力有所增强。黑曲霉最适UV-C灭活模型为Weibull模型pagenumber_ebook=21,pagenumber_book=13(决定系数为0.948 51),烟曲霉最适UV-C灭活模型为Log-Logistic模型:pagenumber_ebook=21,pagenumber_book=13( 决定系数为0.998 89),拟合度高。

Abstract:The ultraviolet c radiation(UV-C)inactivation effect of Aspergillus niger(A.niger)and Aspergillus fumigatus(A.fumigatus)from mango with high detection rate in Baise were analyzed.The Bigelow,Modified Gompertz,Log-Logistic,and Weibull models were used for fitting the inactivation rule of A.niger and A.fumigatus.The results showed that survival rates of A.niger and A.fumigatus were inversely proportional to the irradiation time.The survival rate of A.niger and A.fumigatus decreased by 1.1 order of magnitude,and the death rate was more than 90%at UV-C of 2.524 kJ/m2.The tolerance of A.niger to UV-C was greater than that of A.fumigatus,which A.fumigatus was not tolerant to UV-C of 0-15.04 kJ/m2,but tolerance of A.niger was enhanced to UV-C of 5.04 kJ/m2-7.48 kJ/m2.The optimal UV-C inactivation model of A.niger was Weibull model:pagenumber_ebook=21,pagenumber_book=13(coefficient of determination was 0.948 51),and the optimal UV-C inactivation model of A.fumigatus were Log-Logistic modelpagenumber_ebook=21,pagenumber_book=13(coefficient of determination was 0.998 89).Both of them were goodness of fit.
