中文摘要: 采用臭氧处理可有效降解食品中的农药残留,这已被许多学者证实。而臭氧有强氧化性,且在发挥降解作用的过程中又会产生多种自由基,如·OH,O2-·等,那么臭氧降解农残过后的食品的自身营养价值是否会受到这些自由基的影响,却少有人关注。为探究臭氧降解农残后的食品的营养成分是否会受到影响,以花蛤为例测定水分、灰分、粗脂肪、粗蛋白、总糖等在臭氧降解前后的变化,结果表明:臭氧降解前后这5项营养成分并未产生明显差异。氨基酸组成中,必需氨基酸的含量有所上升,鲜味氨基酸有所减少。脂肪酸组成中,不饱和脂肪酸有氧化现象的出现,但结果也在可接受的范围内(相对误差均小于10%)。测定10种矿物质和4种维生素的含量,也未见极显著变化。因此,臭氧降解农残后对食品的营养价值不会产生较大的影响,不会造成营养成分的流失。
Abstract:The use of ozone can effectively degrade pesticide residues in foods,which has been confirmed by many scholars.Ozone has strong oxidizing properties,and in the process of degrading,various free radicals were generated,such as·OH,O2-·,etc.Whether the self-nutritional value of ozone-degraded food after pesticide residues was affected by these free radicals,few people pay attention.This test was to explore whether the nutrients of foods after ozone degrading pesticide residues was affected,the changes of water,ash,crude fat,crude protein and total sugar before and after ozone degradation were measured by color clams.The test results showed that the five nutrients did not differ significantly before and after ozone degradation.In the amino acid composition,the content of essential amino acids increased,and the umami amino acids decreased.Among the fatty acid compositions,unsaturated fatty acids had an oxidation phenomena,but the results were also within an acceptable range(relative errors were less than 10%).Ten minerals and four vitamins were measured,no significant changes were observed.Therefore,ozone degrading pesticide residues will not have a great impact on the nutritional value of food,and will not cause the loss of nutrients.
