糖醇压片糖果中能量和碳水化合物检测方法研究

中文摘要: 食品营养标签可指导消费者科学合理膳食,但对于糖醇含量较高的食品,目前,GB 28050-2011《食品安全国家标准预包装食品营养标签通则》规定的碳水化合物和能量计算方法不能科学的反映食品的实际情况。该文选择3种糖醇含量较高的压片糖果,分别对其糖醇、碳水化合物和能量进行测定,结果显示直接采用GB 28050-2011规定的计算方法得到的能量和碳水化合物值均偏高,尤其是对于含赤藓糖醇的样品能量差异极大。因此,对于糖醇含量较高的食品需测定其糖醇含量并计算其能量值,可较科学的反映食品的实际能量情况,该方法对于我国相关标准的修订和指导企业营养标签标注具有重要意义。

Abstract:Food nutrition labeling can guide consumers to eat scientifically and reasonably.However,for foods with high sugar and alcohol content,the calculation methods of carbohydrates and energy stipulated in GB 28050-2011<National Standard for Food Safety General Rules on Nutrition Label of Pre-packaged Food Standard> can not reflect the actual situation of food scientifically.In this paper,three kinds of tablet candies with high sugar alcohol content were selected and their sugar alcohol,carbohydrate and energy were determined respectively.The results showed that the energy and carbohydrate values obtained by the calculation method specified in GB 28050-2011 standard were on the high side,especially for samples containing erythritol.Therefore,it was necessary to determine the sugar alcohol content and calculate its energy value for food with high sugar alcohol content,which could reflect the actual energy situation of food more scientifically.This method was of great significance for the revision of relevant standards in China and the guidance of enterprise nutrition labeling.
