中文摘要: 该文以新疆阿图什市无花果为原料,以VC含量、可滴定酸含量、还原糖含量、可溶性固形物含量、硬度、失重率和水分含量为考查指标,研究在3℃低温储藏下不同浓度的壳聚糖溶液涂抹对无花果的品质的影响,寻求最佳的保鲜效果。结果表明:2.0%浓度壳聚糖涂抹处理的无花果的可溶性固形物含量和失重率较其它3组处理有极显著差异(p<0.01),对无花果可溶性固形物含量下降和失重率降低具有明显抑制作用;还原糖含量较其它3个处理有显著差异(p<0.05),硬度和水分含量均与0.0%和1.0%的壳聚糖涂抹处理有显著差异(p<0.05),与1.5%的壳聚糖涂抹处理差异不显著(p>0.05),说明壳聚糖涂抹处理在一定程度上可抑制还原糖的降解速率,减少水分散失,减缓果实的软化;不同浓度的壳聚糖涂抹处理对无花果VC和可滴定酸的含量变化影响不显著。综合考虑不同浓度壳聚糖涂抹对无花果各指标的影响,2.0%浓度壳聚糖涂抹处理的保鲜效果最佳。
Abstract:In this paper,The fig of Xinjiang Atushi city was used as raw material.The VCcontent,titratable acid content,reducing sugar content,total soluble solids,hardness,weightlessness rate and the moisture content were used as indicators to study the preservation effect of different concentrations of chitosan coating under low temperature storage at 3℃,to seek the best fresh effect.The results showed that,the soluble solids content and weightlessness rate of figs treated with 2.0%concentration chitosan coating were extremely significant compared with the other three groups of treatment (p<0.01),the application of chitosan can significantly inhibit the content of soluble solids and decrease the weight loss rate of fig;the reducing sugar content was significantly different from the other three treatments(p<0.05),and the hardness and water content were significantly different from 0.0%and 1.0%chitosan application (p<0.05),the difference was not significant with the 1.5%chitosan application (p>0.05),which indicated that Chitosan coating could inhibit the degradation rate of reducing sugar,reduce water dispersion loss,and slow down the softening of fruits to a certain extend.Chitosan application with different concentrations had no significant effect on the changes of VC and titratable acid content of fig.Considering the effect of different concentrations of chitosan coating,the fig had the best preservation effect under the low temperature storage with 2.0%concentration of chitosan.
