Abstract:Squalene is an important bioactive substance，which is widely used in the development of functional foods，pharmaceutical products and cosmetics.In this paper，the sources and analytical methods of squalene in different biomass and the dynamic changes of squalene in olive oil were described.The contents of squalene in olive oil and other oils were compared.The research progress of the biological activity of squalene in olive oil was reviewed.
