中文摘要: 重金属具有高毒性,尽管它们在各种环境基质中以微量浓度存在,但是其引起的污染仍可能会对环境和人体造成严重的损害。因此,开发重金属检测精确而灵敏的方法对食品中重金属的检测十分有必要。现有传统检测技术依赖昂贵的大型仪器,操作复杂并且耗时较长。生物技术和纳米材料的飞速发展为重金属的检测提供了一种新思路。该文综合介绍重金属检测的常见方法以及近年来核酸适配体和纳米材料在食品中重金属检测应用的研究进展,并对未来的发展前景进行展望。

Abstract:Heavy metals are highly toxic.Although they are present in trace amounts in various environmental matrices,the resulting contamination could still cause serious damage to the environment and humans.Therefore,the development of accurate and sensitive methods for the detection of heavy metals is very necessary for the detection of heavy metals in food.Traditional detection methods for heavy metal ions have a series of disadvantages such as relying on large and expensive instruments,time consuming and complex operations.The rapid development of biotechnology and nanomaterials provide a new way of thinking for the detection of heavy metals.This paper introduced the traditional methods of heavy metal detection and the research progress of aptamer-based analytical methods combined with nanomaterials,and future prospects were discussed.
