中文摘要: 以预处理后的玉米淀粉和三脂肪酸甘油酯为底物,利用微波辐射脂肪酶催化底物直接进行酯交换合成中长链脂肪酸淀粉酯。通过计算产物取代度确定反应的脂肪酶和酰基供体分别为固定化南极假丝酵母脂肪酶(Novozym 435,N435)和三油酸甘油酯(triolein,GTO),并构建微波辅助脂肪酶催化无溶剂反应体系。通过正交试验设计对反应体系进行优化,反应的最佳条件为:淀粉用量2 g;GTO 用量20 g;酶用量为预处理淀粉质量的5%;温度60 ℃;时间2 h,最佳条件下的反应的取代度为0.034 6。
Abstract:Pretreatment corn starch and triglyceride were used as substrates to synthesize medium or long chain fatty acid starch esters directly by lipase -catalyzed transesterification under microwave irradiation.By calculating the degree of substitution of the products,the optimum lipase and acyl donor were determined to be immobilized Candida antarctica lipase(Novozym 435,N435)and triolein(GTO),respectively.A microwaveassistant lipase-catalyed in solvent-free system was constructed.Orthogonal design was used to optimize the reaction system.The optimum conditions were as follows:starch content was 2 g;GTO content was 20 g;lipase content was 5%of the quality of pretreated starch;temperature was 60 ℃;reaction time was 2 hours,and the degree of substitution was 0.034 6 under the optimum conditions.
