中文摘要: 为研究鸭屎香单丛红茶加工过程中主要香气成份的变化规律,采用同时蒸馏萃取法(simultaneous distillation and extraction,SDE)提取香气成份,运用气相色谱-质谱法(gas chromatography-mass spectrometry,GC-MS)技术分离和鉴定香气成份。结果表明:在鸭屎香红茶的制作过程中,红茶的香气化合物数量在增加,茶样的香气成份组成和含量在不同制茶环节变化非常明显;醇类的相对含量呈现先增后降的趋势,发酵环节达到峰值;萜烯醇类化合物中的芳樟醇、芳樟醇氧化物、香叶醇的相对含量大幅下降,芳香族醇类化合物中的苯甲醇相对含量变化不明显、苯乙醇和青叶醇的含量变化分别呈现“N”字型和“A”字型分布;醛类化合物中的苯甲醛、糠醛、苯乙醛相对含量大幅增加,正己醛和青叶醛的含量分别呈现“N”字型和“A”字型分布。萎凋、发酵、干燥工序是影响红茶香气形成的关键工序,加工过程中,香气物质的清香香韵呈现明显减弱,而花香、甜香、蜜香和焦香香韵在增强。花甜蜜韵是鸭屎香红茶的香气特征。
Abstract:In order to study the changing rule of main aroma components in Yashixiang Dancong black tea during processing,the aroma components were extracted by simultaneous distillation and extraction(SDE),and separated and identified by gas chromatography and mass spectrometry (GC-MS).The results showed that during the production of black tea,the total number of aromatic compounds in black tea increased and there were significant differences of composition and content of aroma components in different stages. The relative content of alcohols increased first and then decreased and reached the peak at the end of fermentation. The linalool,linalool oxide and geraniol contents decreased significantly,while benzyl alcohol did not change significantly,and the content of phenethyl alcohol and green leaf alcohol changed in the form of“N”and“A”,respetively. The benzaldehyde,furfural and phenylacetaldehyde content increased significantly. Content trend of n-hexaldehyde showed“N”type distribution,while green leaf aldehyde“A”.Withering,fermentation and drying are the key processes affecting the formation of black tea aroma.Green incense note in the black tea was obviously weakened,but flower fragrance,sweet,honey and caramel aroma enhanced.Sweet flowers and honey rhyme was the aroma characteristic of Yashixiang Dancong black tea.
