中文摘要: 以黄豆、绿豆为原料,亚硒酸钠溶液为硒源,通过黄豆、绿豆的浸泡、发芽过程实现对硒元素的生物富集,制备出富硒豆芽,通过单因素和正交试验优化富硒豆芽培养条件。试验表明,黄豆和绿豆在发芽过程中对不同浓度的硒元素有一定的富集作用,且绿豆芽的富硒能力较黄豆芽强,但随硒浓度增大,培养时间的增长,豆芽生长受到一定程度抑制。试验得出,黄豆芽的最佳培养条件:培养液中硒浓度为6 μg/mL,培养时间为5 d,硒含量达8.82 μg/g。绿豆芽的最佳培养条件:培养液中硒浓度为16 μg/mL,培养时间4 d,硒含量42.23 μg/g。该试验结果表明,绿豆芽硒富集能力和的生长特性较好,更适合作为富硒蔬菜的开发。
Abstract:Soybean and mung bean as raw material,Sodium selenite solution for selenium source,The selenium-rich bean sprouts were cultivated by soaking and sprouting of soybean and mung bean. The optimum condition of the bean sprout growth and the amount of selenium accumulation were studied using single factor and orthogonal experiments to optimize the optimal parameters which the selenium-enriched bean sprouts grow.soybean and mung bean accumulate have different concentrations of selenium in the germination process,the mung bean sprout of selenium-rich ability is stronger than soybean sprouts. but,with selenium concentration and incubation time increases,selenium content in the bean sprouts showed increasing trend,However,with the increase of selenium concentration,the growth of bean sprouts was inhibited to some extent. The optimal production process of selenium-enriched soybean sprouts:selenium concentration was 6 μg/mL,the cultivation time was 5 d,selenium content was 8.82 μg/g.The optimal production process of selenium-enriched mung bean sprouts:selenium concentration was 16 μg/mL,the cultivation time was 4 d,selenium content was 42.23 μg/g.The experimental results showed:the enrichment capacity and growth characteristics of the mung bean sprouts were better and more suitable for the development of selenium-rich vegetables.
