中文摘要: 对豆腐柴叶中的果胶、蛋白质、维生素C、多酚、黄酮、粗纤维、氨基酸、矿质元素等营养成分进行综合分析,用必需氨基酸化学评分法进行评价,为豆腐柴叶开发利用提供理论依据。结果表明:豆腐柴叶营养物质丰富,其中果胶、粗蛋白和维生素C 含量较高,分别为17.33 g/100 g、14.85 mg/100 g、8.14 mg/100 g,氨基酸总量达14.24 g/100 g,必需氨基酸/氨基酸总量为41.36%,必需氨基酸/非必需氨基酸为70.53%,必需氨基酸种类齐全比例均衡,矿物质元素全面,以钾和钙的含量最高,分别为22 683.68 mg/kg 和2 835.15 mg/kg。

Abstract:The research mainly provided theoretical basis for the development and utilization of Premna microphylla Turcz leaves.The nutrients of pectin,protein,vitamin C,polyphenols,flavonoids,crude fibers,amino acids and mineral elements in tofu wood leaves were comprehensively analyzed and evaluated by the chemical score method of essential amino acids.The results showed that Premna microphylla Turcz leaves were rich in nutrients,including pectin 17.33 g/100 g,crude protein 14.85 g/100 g,vitamin C 8.14 mg/100 g.Total amino acids 14.24 g/100 g,EAA/TAA 41.36%,EAA/NEAA 70.53%.All kinds of essential amino acids were well balanced.The contents of potassium and calcium were 22 683.68 mg/kg and 2 835.15 mg/kg,respectively.
