中文摘要: 选用贵州5种茶叶,比较其抗氧化性成分、抗氧化活性及茶汤颜色的差异。结果表明,5种不同茶叶的铁还原氧化能力、ABTS+自由基清除活性、DPPH自由基清除活性、茶多酚等存在显著性差异(P<0.05)。5种茶叶中,湄潭翠芽茶具有较高的茶多酚含量以及较强的抗氧化活性。相关性分析表明,茶多酚与抗氧化性指标呈显著正相关(P<0.05),而抗氧性成分及颜色参数也与抗氧化性、茶多酚有一定的相关性。通过主成分分析表明,茶多酚含量、铁还原氧化能力、ABTS+自由基清除活性、DPPH自由基清除活性等指标是评判茶叶抗氧化性的重要指标。
Abstract:The aim of the present work was to better characterize the antioxidant components,antioxidant activity and color parameters of five types of Guizhou tea.The ferric reducing antioxidant power(FRAP),ABTS+free radical scavenging activity,DPPH free radical scavenging activity and tea polyphenol assays of five teas were determined and compared.Results showed that were significantly different(P<0.05).Among the five kinds of tea,Meitan Turquoise bud had high tea polyphenols content and strong antioxidant activity.Correlation analysis showed that tea polyphenols were significantly positively correlated with antioxidant index (P<0.05),while antioxidant components and color parameters were also correlated with antioxidant and tea polyphenols.Principal component analysis showed that tea polyphenol content,FRAP,ABTS,DPPH and other indicators were important indicators for judging the antioxidant capacity of tea.
