Abstract:Intelligent packaging can actively monitor，sense，record，trace the changes in the internal and external environment of food during its circulatio and help consumers intuitively，accurately，and scientifically determine the status of food quality and freshness.Smart indicators commonly used in smart packaging can be divided into indirect indicators and direct indicators.Indicators are used for real-time monitoring of food quality and subsequently inform the retailers and consumers about the freshness，microbiological，temperature，and shelf life status of the products.The indication mechanism and research progress of different types of indicators in domestic and foreign literatures were elaborated in recent years，and the safety of food intelligent packaging was evaluated.It pointed out the problems still existing in the research and the future research directions，and provided reasonable technical support for improving the scientific and controllability of food intelligent packaging safety monitoring.
