中文摘要: In order to select the sweetpotato with high antioxidant activity and provide theoretical basis for the refined and deep processing of sweetpotato,the antioxidant activities of leaves,vines,peels and fleshes from 4 types of sweetpotatos (leaf-vegetable sweetpotato,starchy sweetpotato,purple sweetpotato,and fresh-eating sweetpotato),18 varieties or lines in total,were compared.Then,polyphenols content,flavonoids content and their correlation with antioxidant activity were analyzed.The results showed that the antioxidant activity,polyphenols content and flavonoids content in different parts of purple sweetpotato were higher than other types of sweetpotato.Among the 4 parts of sweetpotato,the above-mentioned parameters of leaves were the highest.Among the 18 varieties of sweetpotato,Mianzi 9,Nanzi 018,Quanshu 830 and Chuanshu 228 had the better performance.The antioxidant activity was positively correlated with polyphenols content(P<0.01)and flavonoids content (P<0.05).Flavonoids in different parts of sweetpotato were different,but quercetin was the main component in general.
