中文摘要: 茶叶膳食纤维是茶加工业的副产物,其中富含对人体有益的膳食纤维,但是目前对茶叶膳食纤维的综合利用程度不高。该研究通过考察茶叶膳食纤维的持水力、持油力、膨胀力等指标评价其理化性质,并借助扫描电镜、红外光谱、X 射线衍射等对其官能团结构和微观结构进行表征。体外发酵过程中,茶叶膳食纤维可显著增加乳酸菌、双歧杆菌数量,而抑制肠杆菌、肠球菌和产气荚膜梭菌的数量。随着茶膳食纤维浓度的增加,发酵液的pH 值显著降低。利用气相色谱质谱联用技术测定发酵液内短链脂肪酸(short chain fatty acids,SCFAs)的种类和数量的变化,随着茶膳食纤维浓度的增加,SCFAs 各酸含量不断增加,乙酸、丙酸、丁酸和乳酸含量最高分别为(20.65±0.93)、(2.88±0.14)、(10.89±1.01)mmol/L 和(19.91±1.38)mmol/L。结合肠道菌群和SCFAs 结果,最优膳食纤维比例为2%茶膳食纤维可对肠道菌群有益生调节作用。
Abstract:Tea dietary fiber is a by-product of tea processing industry,which is beneficial for human body.However,the comprehensive utilization of tea dietary fiber is still not widely available at present.The physical and chemical properties of tea dietary fiber were evaluated by investigating water-holding,oil-holding and expansion ability,and its functional group structure and microstructure were characterized by scanning electron microscopy,infrared spectroscopy and X-ray diffraction.In vitro fermentation,tea dietary fiber could significantly increase the number of Lactobacillus and Bifidobacterium,while inhibit the number of Enterobacteria,Enterococcus and Clostridium perfringens.As the concentration of tea dietary fiber increased,the pH value of fermentation liquor decreased significantly.The variety and quantity of short-chain fatty acids(SCFAs)in fermentationweredeterminedby gaschromatography-massspectrometer(GC-MS).With the increase of tea dietary fiber concentration,the SCFAs content increased continuously,with the highest content of acetic acid being(20.65±0.93)mmol/L,the highest content of propionic acid being(2.88±0.14)mmol/L,the highest content of butyric acid being(10.89 ± 1.01)mmol/L,and the highest content of lactic acid being(19.91 ± 1.38)mmol/L.Combined with the results of intestinal flora and SCFAs,2 % tea dietary fiber could be added as the optimal proportion,which was beneficial to the regulation of intestinal flora.
