中文摘要: 采用多种样品检测方法,对野生毛叶蔷薇果进行多种营养成分及总黄酮、总酚酸的含量测定,同时对其体外抗氧化能力进行了研究。结果表明,毛叶蔷薇果果实营养成分含量丰富,维生素C含量为27 mg/100 g;含17种氨基酸,氨基酸总量为323.9 mg/100 g,其中7种人体必需氨基酸含量占氨基酸总含量的41%以上;富含矿物质元素,包括K、Ca、Mg、P等,K含量为1 180 mg/kg,Na含量仅为13.5 mg/kg,属于典型高钾低钠水果;毛叶蔷薇果具较好的体外抗氧化活性,其2,2-联苯基-1-苦基肼(2,2-diphenyl-1-picrylhydrazyl,DPPH)自由其清除率超过90%,总抗氧化能力测定(ferric reducing antioxidant power,FRAP)结果为8.184 mmol/mL FeSO4。果实营养成分及体外抗氧化活性研究结果表明,毛叶蔷薇果可被作为一种新型水果开发,亦可以作为一种天然抗氧化资源被深度开发利用。
Abstract:The Nutritional components,flavone and total phenolic acid in Rosa mairei Levl.and its antioxidant activity were firstly studied using different analytical methods in this manuscript.The results showed that there were many kinds of components rich in the fruit of Rosa mairei Levl.Typically,the amount of vitamin C was de-tected to be 27 mg/100 g.About 17 kinds of amino acid were discovered in the fruit.What is more,the total amino acid content was detected to be 323.9 mg/100 g.In the total amino acid,accounts for about 41%were essential amino acid.The fruit was also full of minerals,especially for K,Ca,Mg,P etc..The amount of K was 1 180 mg/kg which was much higher than that of Na(13.5 mg/kg).The fruit of Rosa mairei Levl.is a typical fruit which contains low potassium and high sodium.The Rosa mairei Levl.owns good antioxidant activities in vitro.The antioxidant activity on the 2,2-diphenyl-1-picrylhydrazyl(DPPH)radical scavenging rate was higher than 90%.And the value of ferric reducing antioxidant power(FRAP)antioxidant activity was 8.184 mmol/mL FeSO4.Therefore,the Rosa mairei Levl.can be used as a new fruit with rich nutrient and high antioxidative activity.
