中文摘要: 从东北自然酸菜发酵液中筛选得到一株高产胞外多糖(exopolysaccharide,EPS)的乳酸菌(lactic acid bacteria,LAB),经生理生化试验、形态学观察及分子生物学试验鉴定该菌株为假肠膜明串珠菌(Leuconostoc pseudomesenteroides)。以该菌株为供试菌进行发酵产糖及分离纯化EPS,并采用7种方法测定纯EPS的抗氧化能力。结果表明,Leu.pseudomesenteroides能够产生(38.42±2.15)g/L的EPS,且表现出良好的体外抗氧化活性,清除能力随着浓度的增加而增强,DPPH·、·OH、O2-·、H2O2、和 NO2-清除率及 Fe2+螯合能力分别为(65.34±3.54)%、(78.24±3.52)%、(77.48±2.45)%、(82.78±3.76)%、(38.34±3.28)%和(92.37±2.34)%。
Abstract:A lactic acid bacteria(LAB)with high exopolysaccharide(EPS)-producing ability was isolated from liquid sample of pickle Chinese cabbage.The strain was identified as Leuconostoc pseudomesenteroides accor ding to physiological and biochemical methods.In addition,the EPS was purified and the antioxidant capacity was detected with 7 kinds different methods.The result showed that,the yield of EPS was(38.42±2.15)g/L.The EPS had good antioxidant activity in vitro,and the scavenging activity of EPS was concentration-dependent.The scavenging values of EPS for DPPH·,·OH,O2-·,H2O2,NO2-and Fe2+were about(65.34±3.54)%,(78.24±3.52)%,(77.48±2.45)%,(82.78±3.76)%,(38.34±3.28)%and(92.37±2.34)%respectively.
