中文摘要: 甲壳素/壳聚糖是非常有价值的天然高分子材料。由于其有成膜、拉丝以及无毒、生物相容性等性能,被广泛的应用到各个领域,近几年国内也加大了研究力度,但还远远不够。对甲壳素/壳聚糖的主要制备方法,包括传统的化学法、酶解法、微生物发酵法以及几种新兴的预处理提取方法进行了综述,并介绍了甲壳素、壳聚糖及其衍生物在工业、食品、化妆品方面等领域的应用情况,以期对未来的产业化有所帮助。

Abstract:Abstract:Chitin and its derivatives are very valuable natural polymers.Due to its film forming,wire drawing,non-toxicity,biocompatibility and other properties,it has been used in various fields of human activities.In recent years,domestic research efforts have been increased,but it is still far from enough.The main preparation methods of chitin/chitosan,including traditional chemical method,enzymatic method,microbial fermentation method and several new extraction methods,were reviewed.The application of chitin,chitosan and its derivatives in industry,food,cosmetics and other fields was introduced in order to help industrialization later.
