中文摘要: 综述淀粉分子量的测定方法,包括凝胶渗透色谱、非对称流场流分离和黏度法。对不同品种原淀粉的分子量分布,改变淀粉分子量的各类改性方法,以及分子量与物化性质的关系进行总结,并对今后淀粉分子量的研究方向进行展望。
Abstract:The determination methods of starch molecular weight,including gel permeation chromatography,asymmetrical flow field flow fractionation and viscosity methods were reviewed.The molecular weight distribution of different native starches,the modification methods of starch molecular weight,and the relationship between molecular weight and physicochemical properties were summarized.Future research directions on molecular weight of starch were prospected.
