中文摘要: 微生物检验是食品安全把关的重要环节,而应用传统的培养法检测微生物难以做到及时、准确。PCR技术的出现为微生物快速检测开辟了新的途径,但该方法又难以区分食品中的死活菌。叠氮溴化乙锭(Ethidium monoazide bromide,EMA)与PCR技术相结合,可以快速、准确检测食品中活体微生物,有效减少食品安全事件的发生。将对近年来EMA与PCR、RT-PCR和LAMP技术结合用于食品中活菌研究进展做一综述。

Abstract:Microbiological examination plays an important part in food safety,but based on the traditional culture method is difficult to achieve result timely and accurate.PCR technology has opened up a new way for the rapid detection of microbes,however,it can not distinguish the dead and viable bacteria.Ethidium monoazide bromide (EMA)combined with PCR,can rapidly and accurately detect viable microorganisms from food,therefore reducing the incidence of food safety incidents.In this review,we summarized recent progresses on EMA combined with PCR,RT-PCR and LAMP technology for detecting the viable bacteria in food.
