Abstract:Corn peel is one of the main byproducts of maize processing and production.It is mainly used in the feed industry，resulting in a waste of resources and a relatively low added value.Because there is a lot of corn dietary fiber，it is a good raw material for the preparation of dietary fiber.The physiological functions of corn dietary fiber were summarized，and the methods of extraction and modification of corn dietary fiber and the application of corn dietary fiber in food were summarized.The development prospect of corn dietary fiber was also discussed.It provides some reference for the research of corn dietary fiber and the development and utilization of corn dietary fiber.
