中文摘要: 玉米皮是玉米加工和生产的主要副产品之一,目前主要用于饲料工业,造成了资源浪费,附加值相对较低。玉米皮因存有大量的玉米膳食纤维,故是制备膳食纤维的良好原料。针对玉米膳食纤维的生理功能进行总结,对玉米膳食纤维提取和改性的方法以及玉米膳食纤维在食品中的应用进行概述,并对玉米膳食纤维的发展进行前景展望,以期对玉米膳食纤维的研究和产品的开发及其利用提供参考。

Abstract:Corn peel is one of the main byproducts of maize processing and production.It is mainly used in the feed industry,resulting in a waste of resources and a relatively low added value.Because there is a lot of corn dietary fiber,it is a good raw material for the preparation of dietary fiber.The physiological functions of corn dietary fiber were summarized,and the methods of extraction and modification of corn dietary fiber and the application of corn dietary fiber in food were summarized.The development prospect of corn dietary fiber was also discussed.It provides some reference for the research of corn dietary fiber and the development and utilization of corn dietary fiber.
