中文摘要: 以新鲜水芹为冻干原料,对水芹的真空冷冻干燥工艺的预冻条件进行研究。通过对预冻温度、预冻时间、切分长度等影响因素进行响应面试验分析,确定出最佳预冻条件为:预冻温度-20℃、预冻时间9 h、切分长度7.5 cm。在该条件下水芹冻干速率较高,冻干效果较好。
Abstract:This paper was studied on technology of Oenanthe javanica pre-freezeing in vacuum drying.Through response surface analysis of pre-freezing temperature,pre-freezing time and cutting length,the results showed that the optimum conditions of pre-freezing conditions were-20 ℃,9 h and 7.5 cm length of Oenanthe javanica.Under these conditions,the drying rate was high and the effect of freeze-drying was good.
