中文摘要: 分析了牛肝菌与羊肚菌的营养元素、多糖、蛋白质及氨基酸组成,采用国际通用营养评价标准评估二者蛋白 质及氨基酸营养价值。结果表明:牛肝菌与羊肚菌均富含量磷、钾、铁、硒等营养元素,尤其是磷、钾,含量高达 1.7 mg/g~4.8 mg/g、27.8 mg/g~35.4 mg/g。牛肝菌与羊肚菌的富含蛋白质和多糖,多糖与蛋白质含量分别为牛肝菌 29.9 %、12.35 %; 羊肚菌 31.9 %、8.35 %。必需氨基酸占比,牛肝菌为 49.59 %、羊肚菌为 49.64 %。羊肚菌氨基酸评分、化学评分、必需氨 基酸指数、生物价略高于牛肝菌, 整体上牛肝菌评分接近联合国粮农组织(Food and Agriculture Organization of the U- nited Nations,FAO)标准模式蛋白,而羊肚菌略高于联合国粮农组织/世界卫生组织(Food and Agriculture Organization of the United Nations/World Health Organization,FAO/WHO)标准模式蛋白,更接近鸡蛋蛋白。
Abstract:Analysis of nutrient elements, polysaccharide, protein and amino acid composition in boletus and morel. Using the general nutritional assessment criteria for the evaluation of protein and amino acid nutrition val- ue in boletus and morel. The results showed that both fungi were high in phosphorus and potassium, iron, sele- nium, especially phosphorus, potassium, the content up to 1.7 mg/g-4.8 mg/g, 27.8 mg/g-35.4 mg/g respec- tively. boletus and morel are rich in protein and polysaccharide, polysaccharide and protein content were 29.9 %,12.35 % in bolete and 31.9 %, 8.35 % in morel. The essential amino acids accounted for 49.59 % in bolete,49.64 % in morel. The score of amino acid score, chemical score, essential amino acid index, biological value of Morel is slightly higher than boletus. The overall score of boletus is close to the Food and Agriculture Organi- zation of the United Nations(FAO) standard mode protein, and morel is slightly higher than the Food and Agri- culture Organization of the United Nations/World Health Organization (FAO/WHO) standard model and more close to egg protein.
