中文摘要: 研究了 3 种红薯主栽品种的贮藏加工特性,通过对其淀粉含量、出汁率及榨汁后还原糖含量等主要加工指标 的比较,筛选适合加工红薯浓缩汁的品种。结果表明:在贮藏期内,遗字 138 的保水性较好,但淀粉含量高且平均出汁率 仅为 21.51 %;龙薯 9 号可溶性蛋白含量居三者之首,但贮藏期间品质变化快,适于短期贮藏加工;而红香蕉出汁率显著 高于遗字 138 和龙薯 9 号,且整体淀粉含量较低、糖含量较高,适宜加工红薯浓缩汁。

Abstract:The storage and processing characteristics of three major planting varieties of sweet potatoes were studied. By comparing their main processing indicates such as the starch content, juice yield and reducing sugar content after extracting juice, the suitable one for processing concentrated juice was elected. Results showed that Yizi 138 maintained relatively stable moisture content, but its starch content was highest and average juice yield was only 21.51 % during the storage period. The soluble protein content of Longshu 9th ranked first in three, but it was unstable and fell fast. So Longshu 9th was suitable for short-term processing. However, the juice yield of red banana was significantly higher than another two species, and boasted of lowest starch content and highest sugar content. Therefore red banana was suitable for processing sweet potato concentrated juice.
