大菱鲆鱼皮多肽液的制备及其抗运动疲劳作用

中文摘要: 利用热水水解法制备大菱鲆鱼皮胶原蛋白。以制备的胶原蛋白为原料,利用复合蛋白酶酶解法制备大菱鲆鱼 皮多肽液,并利用单因素和正交试验对复合蛋白酶酶解大菱鲆鱼皮胶原蛋白的工艺进行优化,并对得到的大菱鲆鱼皮 多肽液的抗运动疲劳作用进行研究。结果表明,复合蛋白酶酶解法制备大菱鲆鱼皮多肽液的最佳酶解工艺为:温度50 ℃,pH 6.5,酶用量 0.08 %,酶解时间 8 h。在此工艺条件下大菱鲆鱼皮胶原蛋白的水解度为 68.35 %。小鼠负重游泳实 验和抗疲劳生化指标结果表明大菱鲆鱼皮多肽液具有良好的抗运动疲劳能力。

Abstract:The collagen of Scophthalmus maximus fishskin(SMF) was prepared using the hot water extraction, and was used as the raw material for further study. The peptide liquid of Scophthalmus maximus fishskin (PISMF) was prepared using the compound proteinase enzyme hydrolysis method, which was optimized using the single factor experiment and orthogonal experiment. In addition, the anti-exercise-fatigue activity of PISMF was analyzed. The results showed that the optimum enzyme hydrolysis condition of collagen of SMF using com- pound proteinase enzyme hydrolysis method was: temperature 50 ℃, pH 6.5, enzyme dosage 0.08 %, dissocia- tiontime 8 h. Under the optimum conditions, the enzymatic hydrolysis degree of collagen of SMF was 68.35 %. The results of the weight-loaded swimming test and the biochemical indicators associated with fatigue showed that PISMF had a good resistance to movement fatigue.
