中文摘要: 采用芳香族大孔吸附树脂分级提取市售有色糖中的色素,并测定其总酚含量。利用邻苯三酚自氧化法评价分 级提取色素的抗氧化性,分析色素解吸液中总酚含量与抗氧化能力之间的相关性。结果表明:60 %的乙醇对 SD300 芳 香族大孔吸附树脂吸附解吸分离得到的色素中总酚含量最高;使用 60 %乙醇作解吸剂,市售有色糖色素中酚类物质含 量大小顺序是糖蜜>赤砂糖>冰片糖>黄冰糖,抗氧化能力由强到弱的顺序是糖蜜>赤砂糖>冰片糖>黄冰糖。

Abstract:The pigments of commercially available colored sugars were extracted by macroporous resin and the total polyphenol contents of pigments were determined. The antioxidant activity of extracted pigments was evalu- ated using the pyrogallol auto-oxidation method,and the correlation between the total polyphenol content and the antioxidant activity of each sample was studied. Results indicated that the highest total phenol content for SD300 aromatic macroporous adsorption resin was in the sample eluted using 60 % ethanol. In extracted samples using 60 % ethanol as extracting agent, the total polyphenol content changes in the material order of molasses, brown sugar, borneol sugar and yellow rock sugar from large to small, correspondingly the antioxidant activity changes in the same order.
