中文摘要: 以淮山药、荷叶、山楂、甘草作为原料,加纯净水榨汁或浸提后,加入柠檬酸和复合稳定剂等制备饮料。饮料 的最佳配方为淮山药浆 22 %,荷叶汁 17 %,山楂汁 12 %,甘草汁 15 %,柠檬酸 0.18 %,复合稳定剂为 0.07 %琼脂、
0.07 %羧甲基纤维素和 0.11 %黄原胶。饮料红色澄清、酸甜可口、味道协调。
Abstract:Yam, lotus leaf, hawthorn and licorice were extracted with pure water, then juices were used to make compound beverage with citric acid and composite stabilizer. The best formula was 22 % yam paste, 17 % lotus leaf juice, 12 % hawthorn juice, 15 % licorice juice and 0.18 % citric acid. Composite stabilizer was
0.07 % agar, 0.07 % carboxymethyl cellulose and 0.11 % xanthan gum. Beverage is red and clear, sweet and delicious, taste coordination.
