中文摘要: 以冲泡后的岩茶茶渣为原料,采用酶法研究膳食纤维(IDF)的提取工艺参数,得出用 琢-淀粉酶处理茶粉的粗膳食纤维提取条件是:酶解温度55 ℃、酶添加量0.06 g/g、pH 9、酶解时间1 h、料液比1:15(g/mL);木瓜蛋白酶精制IDF的最佳工艺条件是:酶解温度45 ℃、酶添加量0.004 g/g、 pH值为4、酶解时间2 h、料液比1:15(g/mL),此条件下膳食纤维的提取率最高,为97.12 %。
Abstract:The extraction process of dietary fiber (IDF)was studied by enzymatic method after brewing tea as raw material. The results showed that the condition of the treatment of the crude dietary fiber by the amylase was:the enzymatic hydrolysis temperature was 55 ℃,the amount of enzyme was 0.06 g/g,pH 9,the time of enzymatic hydrolysis was 1 h,and the solid-liquid ratio was 1:15 (g/mL). The best extraction conditions of the extract of IDF from papaya were :the enzymatic hydrolysis temperature was 45 ℃,the amount of enzyme was 0.004 g/g,the pH was 4,the time of enzymatic hydrolysis was 2 h,and the solid-liquid ratio was 1:15(g/mL). Under this condition,the extraction rate of dietary fiber was the highest,which was 97.12 %.
