中文摘要: 利用仫佬族野生毛葡萄为主要原料研制运动保健饮料,采用单因素和正交试验法对影响运动保健饮料的主 要因素(仫佬族野生毛葡萄汁用量、蔗糖用量、柠檬酸用量、黄原胶用量)进行优化,并通过小鼠试验对运动饮料的抗 疲劳功能进行研究。结果表明:最佳工艺参数为仫佬族野生毛葡萄汁用量 20 %、蔗糖用量 5 %、柠檬酸用量 0.14 %、 黄原胶用量 0.15 %,在此工艺参数下,产品的感官评分值最佳,为 90.7 分。小鼠试验结果表明:小鼠经灌胃运动保健 饮料 30 d 后,小鼠负重游泳时间显著延长;游泳 10 min 及游泳 10 min 休息 20 min 后,小鼠灌胃剂量越大,小鼠血乳 酸值下降越大,说明此保健饮料可减少运动时机体乳酸含量。因此,仫佬族野生毛葡萄保健饮料对小鼠具有抗疲劳、 增强运动能力的功能。
Abstract:Mulao wild vitis was used as main raw material for the development of sport and health drinks, main factors was optimized single factor and orthogonal test method : amount of Mulao wild vitis juice, the amount of sugar, the amount of citric acid, the amount of xanthan gum and conduct research on the sports drink in mice by anti-fatigue function tests. The results showed: the optimum parameters for the Mulao wild vitis juice 20 %, the amount of 5 % sugar, the amount of 0.14 % citric acid, the amount of 0.15 % xanthan gum, in this process pa- rameters, the product of the best organoleptic scores , 90.7 points. The results showed that : mice fed sport and health drinks for 30 d, mice swimming time was significantly longer; swim and swim 10 min and rest after 20 min, mice was fed the greater the dose, the greater the reduction in mice blood lactate large, indicating that this may reduce the body's health drinks, lactic acid levels during exercise. Therefore, Mulao wild vitis has an- ti-fatigue, enhance athletic ability to function.
