中文摘要: 通过单因素试验和正交试验对影响蓝莓花青素提取量的因素进行研究。结果表明,在酸性条件下,乙醇浓度60%、料液比1∶10(g/mL)、提取温度50℃、提取时间90 min为蓝莓花青素最佳提取工艺条件,提取量达343.30 mg/100g。

Abstract:The effects on extraction yield of anthocyanins were studied by single factor experiment and orthogonal experiment.The results showed that the optimal conditions were as follows:alcohol concentration 60%,solid-liquid ratio 1∶10(g/mL),extraction temperature 50℃,extraction time 90 min.Under these conditions,blueberry anthocyanin yield was up to 343.30 mg/100 g.
