中文摘要: 对黑老虎籽的主要功能成分进行分析。研究结果表明:黑老虎籽中粗多糖的含量为2.68 g/100 g,总黄酮(以芦丁计)的含量为1.84 g/100 g,总皂苷(以人参皂苷计)的含量为0.21 g/100 g。还含有维生素B1、维生素B2、维生素C、维生素D、维生素E,以及丰富的矿质元素,特别是人体必需的微量元素铁、锌、硒。黑老虎籽中共含有12种脂肪酸,其中,不饱和脂肪酸含量占脂肪酸总量的87.19%,亚油酸的含量占不饱和脂肪酸的比例高达81.18%。除此之外,黑老虎籽中还包括16种氨基酸,其中7种为人体的必需氨基酸,9种为非必需氨基酸,氨基酸的种类较为齐全。由此可见,黑老虎籽可以开发具有抗氧化、抗疲劳、延缓衰老、降血脂、降血压、调节中枢神经、提高免疫力等功能的保健食品。
Abstract:The main functional components of Kadsura.coccinea seeds were analyzed.The results showed that the content of crude polysaccharide was 2.68 g/100 g,the content of total flavonoids(rutin)was 1.84 g/100 g and the total saponins(ginsenosides)content was 0.21 g/100 g.Itcontained vitamin B1vitamin B2,vitamin C,vitamin D,vitamin E as well as the abundant mineral elements,especially the essential trace elements,such as Fe,Zn,Se.K.coccinea seeds had 12 kinds of fatty acids,in which contained 87.19% unsaturated fatty acids. Itwas worth mentioning that linoleic acid contentac counted for the proportion of unsaturated fatty acids as high as 81.18%.In addition,the resultshowed that16 amino acids were found in K.coccinea seeds,including 7 essential amino acids and 9 nonessential amino acids,the kinds of amino acids was relatively complete.It could be derived that K.coccinea seeds coud develop functional food which had the effect of antioxidant,antifatigue,antiaging,antilipidemic,antihypertensive,regulating central nervous system or improving immunity.
