Abstract:Eurotium cristatum is dominant in the yellow funguses called 'golden flower' during Fuzhuan brick tea manufacturing，and is found responsible for the unique flavor of Fuzhuan brick tea. Several studies has con鄄 formed the safety of Eurotium cristatum，and Eurotium cristatum is one of the physicochemical indexes of Fuzhuan brick tea. Eurotium cristatum secretes polysaccharides and statins，and may involve in the regulation of blood lipid and conditioning of digestive health. Fuzhuan brick tea is revealed to have health efficacy in several aspects，especially in the regulation of blood lipid and conditioning of digestive health compared to other dark tea. It was suggested that Eurotium Cristatum takes parts in health efficacy of Fuzhuan brick tea，and more proof is required for future studying.
